The beginning of a new chapter.
Here I am, about to start a year long course training to be a chef at the world famous Leiths School of Food and Wine. This is a complete change of direction in both my career, and current life style, it will be hard, but I am hella excited!
I will be doing my very best to blog the next year of my life, including recipes, tips and tricks and all round new experiences. Ideally I will upload a new blog every week in between practicing new recipes and dishes for school and writing menu plans.
It has been a dream of mine to attend this school, and to take part in the ‘Diploma’ for several years now, but a few months ago I bit the bullet and decided to go for it. Excited does not even cover how I’m currently feeling, obviously terrified and nervous of what to expect, but that’s always going to happen with a new experience. One thing I am most looking forward to is being able to talk ‘food’ with other people who have a passion for it as much as I do, don’t get me wrong, my friends, family and fiancée certainly love hearing about it, and better yet tasting the food I cook, but I am very much looking forward to bouncing ideas, sharing recipes and just meeting new people.
I am aware of the fact that I am going to be learning everything again from scratch, everything I think I already know, which is great, because I don’t want to walk in there thinking I already know this, because… well… that will just lead to an epic failure.
I will be commuting every day from Hertfordshire, about a 90 minute journey door to door, which, don’t get me wrong, seems like it will be very strenuous, but when you are so passionate about achieving something this big, sometimes the struggles are exactly what we need. Give every opportunity a chance, leave no room for regrets.
So here is to the beginning of the rest of my life, keep checking in for photos of delicious food (hopefully if all goes to plan), and various other things. Wish me luck (insert cheesy motivational poster).
