Garlic bread has always been a pretty popular choice of food in my household, as I’m sure it is in most… you know why? ITS BLOODY DELICIOUS!
If you don’t like garlic you must be a vampire, it’s seriously one of my all time favourite flavours. Whenever I think ‘Ok Rich, that’s probably enough garlic now’, I’ll then think ‘SHUT UP STUPID BRAIN!’ Then just wack in 2 more cloves. Anyway I’m getting side tracked.
Garlic Bread! Garlic bloomer bread to be exact! CHEESY garlic bloomer bread to be exactly precise!!! How I spoil you.
You will need:
- A nice fresh bloomer loaf
- 100g Butter melted
- 3/4 Spring Onions
- Fresh Mozzarella
- 50g Mature Cheddar
- Olive Oil
I think that’s everything… oh no wait
- 6 Cloves of garlic! 6! Chopped/Crushed/Pressed into a paste like texture
- Garlic Salt
Pre heat your oven to 180 degrees celsius.
Start by slicing the bread 3/4s of the way down lengthways width ways, then do the same lengthways to you are left with squares you could easily tear out.
Mix the melted butter with the garlic and a sprinkle of the garlic salt, stir until well combined. Using a teaspoon drizzle the garlic butter into the individual little pockets of bread making sure theres a nice even quantity throughout sinking through.
Slice the mozzarella into little pieces and again, place them in the pockets of bread making sure you cover the whole thing not leaving any spots bare. Grate the mature cheddar and also push down into the pockets.
Finely chop the spring onion and scatter on top of the bloomer.
Place the bloomer on a baking tray and drizzle a little olive oil over the top to give it that extra crisp.
Cook in the oven for 20 minutes or until the cheese is bubbling away nicely.
Serve on a big plate or chopping board and let people dig in themselves and watch them enjoy.
