Eggy Bread with Apple and Sultanas
I should probably start posting some more healthy recipes to get a variety of things going on. NOT TODAY THOUGH! Get ready to indulge.
You will need:
- Loaf of crusty bread
- 4 cox apples
- 5 tbsp sugar
- 50g raisins
- knob of butter
- 3 whole eggs
- 4 tbsp milk
- 3 tbsp sugar
- 2 tsp cinnamon
- 1/2 tsp all spice (optional)
- Icing sugar to dust (optional)
Lets start by making the apple and sultana compote… which may I say is INSANEly good.
Start by slicing and dicing 4 apples, leave the skin on, it adds a nice texture in the end and also contains great flavour. Get rid of the pips and core, then mix the diced apple with sultanas until well combined.
On a medium heat start heating 2 heap table spoons of caster sugar, once it starts to melt add the apple and sultanas and gently mix. After 2 minutes add a generous knob of butter and continue to mix. This is going to create a really smooth light caramel to coat the fruit. If the mixture looks too runny add a little more sugar. Once it looks nice a thick and a golden colour take it the heat down to low and make sure to keep an eye on it, stirring every so often.
Next up we’re going to make the mixture for the bread, dead easy, but amazing.
First up crack the eggs into a mixing bowl and give them a whip until you have a nice smooth pale liquid. While continuing to whisk, add 4 tablespoons of milk, 3 tablespoons of sugar, 2 teaspoons of cinnamon, and half a teaspoon of all spice if you have it. All spice is not essential but just brings the flavour to another level.
Whisk it up until you have a darker brown liquid.
Start slicing some thick crusty bread, and dip it in the liquid, making sure it’s fully coated.
Start heating up a frying pan with a little oil and a knob of butter melting, the oil is to stop the butter from melting, just a splash will do. (Hey I did say this wasn’t a healthy one remember).
Fry the bread on a medium to high heat until golden brown on each side and crispy.
Slice the bread into triangles and arrange nicely on a plate. Top with the apple and sultana compote then dust with icing sugar.
