One of my favourite recipes ever is Rocky Road, it’s diverse, tastes amazing, and SO EASY to make!
Seriously there are so many different variations of this recipe, anything you think might go well, you should try it and see if it works.
Here’s one of my favourite combinations of ingredients.
You will need:
100g Softened Butter
300g Milk Chocolate
3/4 Tbsp Golden Syrup
300g Digestive Biscuits
100g Mini Marshmallows
75g Glacier Cherries
75g Honey Roasted Peanuts
75g Sweet Popcorn
3 Creme Eggs Crushed
You may be thinking, WOW! This sounds like its for quite the sweet tooth, well, you would be right! Like I said before, this is just one variation of hundreds, maybe thousands!
Lightly grease a 25x25cm baking tin and lin with greaseproof paper.
In a glass bowl over a saucepan of boiling water gently melt the butter, chocolate and golden syrup. Make sure the bottom of the bowl does not touch the water. Do not stir the mixture, leave it to slowly melt. After approx 5 minutes give it a stir to melt the final lumps. You should be left with a lovely shiny chocolate liquid.
Next smash the digestives in a sandwich bag with a rolling pin and place them in a mixing bowl. Add the marshmallows, cherries, peanuts, popcorn and mix together.
Once well combined slowly pour the chocolate mixture and mix well.
Spoon the mixture into your greased baking tin press it down with the back of a spoon or spatula.
Unwrap the creme eggs and lightly crush them on a chopping board so you are left with around 4 pieces from each egg. With a spoon make little holes around the top of the rocky road mix and press the creme egg in.
Place the mix in the fridge to set for at least 2 hours.
To serve, remove from the baking tray and cut into squares.
