Perfect Crackling Pork Belly
Ever think about the best way to make the perfect crackling?
Perfect is quite a big word to use when it comes to this kind of thing. But follow this recipe to the DOT, and you will achieve a perfect roast pork belly with, you guessed it, perfect crackling.
Careful though, after making this recipe once, you’ll want to do it everyday. It’s so good.
You will need:
- A beautiful cut of pork belly
- Sunflower oil
- Salt and Pepper
Thats literally it, nothing else. Let the flavour speak for itself… and believe me it will.
Start by heating your oven to 180 Degrees celsius.
Unroll your pork belly and place it flat on a metal rack on top of a roasting tin with about 1-2 inches of water in the bottom.
Splash a nice plug of sunflower oil on the top of the pork belly, making sure you massage it into the skin and rub it all over the top of the meat.
Sprinkle the top with a large pinch of salt and pepper.
Place in the oven for about 90 minutes to 2 hours or until the top is golden brown and makes a nice hard sound when you tap it with a knife, topping up the water every so often if it reduces down too much.
Take it out of the oven and rest for 10 minutes, slice and serve immediately.
