Sweet Cherry Pie

This cherry pie tastes SO GOOD.. it literally makes grown men cry.

We’re going for the easy approach to this recipe, so don’t get your knickers in a twist that we’re not making our own pastry. Shop bought pastry is JUST as good if you don’t have the time to make your own.

This is a great recipe for those just getting into baking and want to impress, it tastes great, is relatively quick and is easy!

You will need!

  • Cherries Pitted (You can buy pitted cherries, or if you’re feeling really super, you can purchase an actual pitter and do it yourself!) 
  • 1 Lemon
  • 2 Heaped Tbsp cornflour
  • 100g Caster sugar plus extra for dusting
  • 1/2 Vanilla Pod split lengthways
  • 200ml water
  • 1 Roll of short crust pastry
  • 1 Roll of puff pastry
  • Knob of Butter melted 

Start by pre heating your oven to 180 Degrees Celsius.

Lightly grease a pie/tart tin making sure you go up all the sides. Lightly sprinkle some sugar on the bottom and around the sides of the tin, this will create a nice crunch to the bottom of your pie.

Once your cherries are pitted, place them in a bowl with the sugar, the corn flour and water and simply mix together until well combined. Scrape the vanilla seeds in and mix again.

Roll out the short crust pastry (you may need a rolling pin to stretch it a little more to fit your tin). Lay the pastry in the tin pressing it into the corners and up the sides. 

Measure out equal quantities of sugar and flour then sprinkle over the bottom of the pastry. This will help soak up moisture and reduce the ‘sogginess’ of your bottom… 

Spoon the cherry mixture on top of the pastry and even it out, we don’t want anyone getting more cherries than others in their slice now do we!

Now for the tricky bit, we are going to lattice the top to really impress your friends! We found a really great tutorial the folks at ‘www.gimmesomeoven.com’ to help you do it, but first, roll out the puff pastry and using a sharp knife or pizza cutter, slice the pastry into 10/11 strips.


Now you can either use milk or melted butter to brush the pastry, we use butter as we felt it gave a nice golden glow to the finish. Sprinkle some caster sugar over the top and cook in the oven for 35-40 minutes or until golden brown and bubbling.

Leave to cool.

Serve with whipped cream or ice cream, also have Cherry Pie by Warrant playing on your phone as your serve to let people know you mean business.
